Snack Attack: Spicy Cauliflower Bites

Whether you're trying to sneak more veggies into your kids' diet (or your own), or you already shout your love of cauliflower from the rooftops, this recipe is for you. Snacking can often be one of the pitfalls of maintaining a healthy diet. While some think that snacking on carrot sticks can provide the same satisfying crunch of a potato chip, we're not so easily fooled. Sometimes you need something with salt, spice and a satisfying texture to kick a craving in the teeth. Enter Spicy Cauliflower Bites. Not only are these tasty, but they're a great source of fiber and Vitamins C and K. This is a really versatile recipe, but we used a blend of turmeric, which is great for reducing inflammation, garlic and cayenne pepper.

To make this recipe you will need:

1 medium head of cauliflower, washed and cut into florets 3-4 tablespoons olive oil juice from half a lemon 1 teaspoon turmeric 2 cloves garlic, minced 1 teaspoon sea salt 1/4 teaspoon cayenne pepper 1/4 teaspoon red pepper flakes 1 tablespoon fresh parsley, minced

Preheat oven to 400°. In a large bowl toss cauliflower with oil and spices. Spread in one even layer on a cookie sheet and bake for 35-40 minutes, stirring halfway through. Remove from oven and let cool.
