Valentine's Breakfast: Gluten-Free Waffles

Spread some love this Valentine's Day with this hearty recipe for Gluten-Free Chocolate Chunk Waffles. We topped ours with whipped honey, which is delicious and decadent, but you could always use maple syrup if that's more your style.

To make this recipe you will need:

1 ¼ cup unsweetened almond or coconut milk
1 teaspoon apple cider vinegar
¼ cup safflower or melted coconut oil
¼ cup maple syrup or honey
1 teaspoon vanilla extract
½ cup gluten-free rolled oats
1 ¾ cups gluten-free flour blend
1 ½ teaspoon baking powder
Pinch sea salt
½ cup dark chocolate chunks or chips

For whipped honey:

½ cup crystallized honey
½ cup fresh honey

Combine milk and vinegar in a small mixing bowl and set aside for a few minutes to curdle. Add oil, vanilla, and maple syrup and whisk to combine. Set aside. In a large mixing bowl add dry ingredients and whisk until well combined. Add wet ingredients to dry and mix until well incorporated. Let sit for 5-10 minutes while your waffle iron preheats. Once waffle iron is ready, coat with non-stick spray and pour on about 1/2 cup of batter. Cook waffles according to manufacturer instructions and then remove and place on a baking rack in a 200 degree oven to keep warm. Keep them in a single layer to maintain the crispiness.

To make whipped honey, combine ½ cup crystallized honey and ½ cup fresh honey in the bowl of a mixed and whip on high for 15-20 minutes. It will turn white and increase in volume.
