We know you want to make the most of these warmer months and we think this recipe for Rhubarb Mojitos is a perfect way to do it. The mix of tangy, local rhubarb, sweetened with honey and cinnamon, fresh and sour lime juice, and cool muddled mint leaves will be a hit at any outdoor bash.
To make this recipe (for one cocktail) you will need:
2 ounces white rum
4 ounces rhubarb syrup (recipe below)
8ish mint leaves
3 tablespoons lime juice
1 teaspoon sugar
In the bottom of a glass, muddle the mint leaves, lime juice, and sugar. Be sure to really break up the mint leaves to release their oils. Add syrup and rum and gently stir. Top with ice and garnish with a slice of lime and stalk of rhubarb.
To make the rhubarb syrup you will need:
1 cup chopped rhubarb
2/3 cup honey
2 cups water
1/4 teaspoon cinnamon
Combine all ingredients in a small saucepan. Bring to a boil, then reduce for a simmer for 6-8 minutes. Strain the mixture through a fine sieve.
