Quinoa Breakfast Bowls

This recipe is for anyone whose breakfast could use a bit of a makeover. If your typical eggs and fruit or oatmeal aren't cutting it anymore, then give this Quinoa Breakfast Bowl a try. Quinoa seems to be all the rage lately and it's no wonder why. Quinoa is a complete protein, full of all nine amino acids. It also has more than twice the fiber of most grains, making it great for lowering blood pressure and aiding in digestive health.

One of the great things about this recipe is that you can make a big batch of quinoa ahead of time and keep it in the fridge for several days of breakfast bowls.

To make this recipe you will need:
1/2 cup prepared quinoa
4-6 ounces Greek yogurt
1 tablespoon goji berries
1/4 cup blueberries
1/4 cup blackberries
1/4 pear, sliced
drizzle of honey is yogurt is unsweetened

To prepare quinoa, rinse in cool water. Place 2 cups water and 1 cup quinoa in a saucepan with a pinch of salt. Bring to a boil, cover, and simmer 15-20 minutes until liquid is absorbed. Let cool.

Assemble all ingredients in a bowl and enjoy.
